Try this recipe for some delicious vegan cookie dough energy balls – perfect for a post work out.

Cookie Dough Energy Balls

Ingredients 

1 cup cashews 

2 cups oats 

Pinch of salt 

¼ cup melted coconut oil 

2 scoops Vanilla Vega Essentials or Clean* Protein

2 tbsp cashew or almond drink – plus a little extra if needed

65g dark chocolate roughly chopped 

1 cup almond butter

¼ cup maple syrup 

Method 

  1. Place the cashews and oats in a food processor and process to a fine powder. Add the remaining ingredients except the chocolate and blitz again until the mixture comes together into one lump, you may need to add a splash more plant-based drink, if the mixture is too dry.
  2. Knead in the chocolate and then roll into walnut sized balls.
