Contrary to what you may think, pancakes don’t have to be unhealthy. Nutritionist at Natures Plus, Martina Della Vedova shares her Vegan Paleo Protein Pancake recipe (which is also gluten free) for you to enjoy without the guilt!
Ingredients:

  • 125gr polenta flour
  • 125gr gluten free flour
  • 2 scoops of Paleo Protein Powder by Natures Plus (£22.50, naturesplus.co.uk)
  • 1 1/2 tsp baking powder
  • 1 banana
  • 250ml coconut milk sugar free
  • 1tsp cinnamon
  • 2 tbsp. soaked goji berries 
  • Coconut oil for frying

Method:
First, mix all the dry ingredients into a bowl
Mash a banana and add it to the mix along with the soaked goji berries 
Add the milk, pouring it in small quantities
Heat a well oiled pan (using coconut oil) over medium-high heat and pour the pancake mix in a ladle at a time
Cook until bubbles begin to form and the edges become gold
Flip and keep the pancake in the pan until golden brown
Add cinnamon to taste and serve with your favourite fresh fruit
TOP TIP: Top pancakes off with some cranberries and blueberries, which are not only packed full of Vitamin C, but can also make your pancakes look more instagrammable!!
