The Vegetable Butcher looks at how to select, prep, slice, dice and cook vegetables. There are step-by-step directions and photographs and the fundamentals that every cook should know: how to quickly and easily work with an artichoke, how to chiffonade kale, how to prepare nettles and the art of making crispy fingerling potatoes.

 

Cara Mangini comes from a long line of traditional butchers but is one of the first ‘vegetable butchers’ at Eataly in New York City. She is executive chef of Little Eater her vegetable-inspired restaurant, produce stand and artisanal foods boutique.

While there is no meat in her recipes we note that one or two of the ideas of using the vegetables prepared do not specify vegan cheeses… however all can easily be adapted to suit food preferences and you may be particularly interested in the more unusual vegetables she prepares and her delicious recipes.

Cara believes that eating vegetables is one of life’s greatest pleasures, she’s obsessive that her vegetables are meticulously selected, expertly prepared, seasonally updated and infinitely celebrated.

Growing up in the San Francisco Bay Area and working at some of New York’s and Napa Valley’s top culinary destinations, Cara developed a passion for produce at its peak and honed her skills in its selection and preparation. Ever since, she’s been on a mission to put vegetables at the center of the American plate.
